Curry Chicken Salad

Curry Chicken Salad is a quick and easy meal that’s full of flavor.

It has shredded chicken, celery, raisins, and a creamy curry-spiced dressing that brings it all together.

You can serve it on sandwiches, in wraps, with crackers, or over a bed of greens for a simple and delicious meal.

It’s perfect for meal prep, easy lunches, or a no-fuss dinner when you need something quick!

Ingredients

Ingredients: Chicken, raisins, curry powder, cashews, red onion, cilantro, pepper, salt, mayonnaise, celery ribs, and lemon.

Shredded cooked chicken: Use leftover rotisserie chicken or chicken breasts for a quick, easy option. Shredding the chicken makes it blend well with the other ingredients.

Celery: Be sure to chop the celery finely so it mixes evenly with the other ingredients.

Raisins: Golden raisins are a great choice. If you prefer a less sweet flavor, try swapping them for dried cranberries.

Red onion: Red onion adds a mild sharpness, but you can soak the onion in water for 5 minutes to mellow out the taste if it’s too strong for you.

Cashews: Use roughly chopped cashews.

Mayonnaise: We use full-fat mayonnaise.

Curry powder: The type of curry powder you use will affect the flavor, so choose a mild or medium blend if you’re not used to strong spices.

Lemon juice: We prefer using fresh lemon juice if possible.

Salt and pepper: Always season to taste, as the amount of salt and pepper can vary depending on your preference and the saltiness of the chicken.

Cilantro leaves: Optional but highly recommended.

How to Make

To make the Curry Chicken Salad, begin by placing the shredded chicken, chopped celery, raisins, red onion, and cashews into a large mixing bowl.

Next, add the mayonnaise, curry powder, and lemon juice on top of the ingredients.

You can serve the salad immediately or store it in the fridge for later, letting the flavors develop even more over time.

Tips & Tricks

Use leftover rotisserie chicken to save time on cooking the chicken.

If you’re not a fan of cilantro, parsley is a great substitute or skip the herbs altogether.

Leftovers/Storage

Store any leftover Curry Chicken Salad in an airtight container in the fridge for up to 4-5 days.

This salad does not freeze well due to the mayonnaise, so it’s best to enjoy it fresh or within a few days of making it.

What to Serve with Curry Chicken Salad

Here are some of our favorites to serve with Curry Chicken Salad:

Crusty bread: A slice of fresh bread is perfect for scooping up the salad.

Pita chips: These pair well with the creamy salad.

Fresh fruit: Slices of melon or a fruit salad can balance the savory flavors.

Veggie sticks: Carrots, cucumber, and bell peppers make a great side.

Rice crackers: These light and crispy crackers complement the flavors beautifully.

Green salad: A simple side salad with greens and a light dressing adds freshness to the meal.

F.A.Q.

Can I use canned chicken?

Yes, canned chicken works in a pinch; just drain and rinse it before use.

What if I don’t have raisins?

Dried cranberries or chopped dates can be used as a sweet substitute.

What’s the best way to pack this for lunch?

Use a bento box with compartments to keep the salad separate from any sides.
